Eggplant Parmesan Melts



A delicious twist on the classic eggplant Parmesan, these melts feature crispy breaded eggplant slices layered with marinara sauce and gooey mozzarella cheese, all sandwiched between slices of bread.

Ingredients:

  • 1 large eggplant, sliced into 1/4-inch rounds
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 eggs, beaten
  • 1 cup marinara sauce
  • 8 slices mozzarella cheese
  • 8 slices sandwich bread
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

Preheat oven to 400F 200C

Season eggplant slices with salt and pepper

Dip each slice into beaten eggs, then coat with breadcrumbs mixed with Parmesan cheese

Heat olive oil in a skillet over medium heat

Fry eggplant slices until golden brown on both sides, about 2-3 minutes per side

Place fried eggplant slices on a paper towel-lined plate to drain excess oil

On a baking sheet, arrange 4 slices of bread

Spread marinara sauce on each slice

Top with fried eggplant slices and a slice of mozzarella cheese

Cover each sandwich with another slice of bread

Bake in the preheated oven for 5-7 minutes, or until the cheese is melted and bubbly

Serve hot and enjoy!
