Maple Peanut Butter Toffee Cookies

Ingredients:

  • 1 cup creamy peanut butter
  • 1/2 cup real maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup toffee bits

Instructions:

Preheat the oven to 350F 175C and line a baking sheet with parchment paper

In a mixing bowl, combine the peanut butter, maple syrup, egg, and vanilla extract

Mix until smooth and well combined

Add the baking soda and salt to the mixture and mix again until incorporated

Fold in the toffee bits, distributing them evenly throughout the dough

Using a spoon or cookie scoop, drop spoonfuls of dough onto the prepared baking sheet, leaving some space between each cookie

Gently flatten each cookie with a fork, making a crisscross pattern on top

Bake in the preheated oven for about 10-12 minutes, or until the edges are golden brown

Remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
