Almond Butter Oatmeal Cookies



These gluten-free and dairy-free almond butter oatmeal cookies are a delightful treat that combines the nutty richness of almond butter with the wholesome texture of oats. Perfect for those with dietary restrictions or anyone who loves a good, healthier cookie option.

Ingredients:

  • 1 cup almond butter
  • 1 cup gluten-free oats
  • 1/2 cup coconut sugar
  • 1 egg or flax egg for vegan option
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dairy-free chocolate chips

Instructions:

Preheat the oven to 350F 175C and line a baking sheet with parchment paper

In a mixing bowl, combine the almond butter, coconut sugar, egg or flax egg, and vanilla extract

Mix until well combined

Add the gluten-free oats, baking soda, and salt to the mixture

Stir until everything is evenly incorporated

Fold in the dairy-free chocolate chips

Using a spoon or cookie scoop, drop spoonfuls of dough onto the prepared baking sheet, spacing them apart

Flatten each cookie slightly with the back of a fork

Bake in the preheated oven for about 10-12 minutes, or until the edges are golden brown

Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
