Because they are made with black beans, these brownies are better for you than regular brownies because they are high in protein and fiber. Plus, they're really soft and moist!
Ingredients:
- 1 can 15 ounces black beans, rinsed and drained
- 3 large eggs
- 3 tablespoons coconut oil, melted
- 1/4 cup cocoa powder
- 1 teaspoon vanilla extract
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1 pinch salt
- 1/2 cup chocolate chips
Instructions:
Preheat oven to 350F 175C
Grease a 9x9-inch baking pan
In a food processor, blend black beans until smooth
Add eggs, coconut oil, cocoa powder, vanilla extract, sugar, baking powder, and salt
Blend until well combined
Fold in chocolate chips
Pour batter into the prepared baking pan
Bake in preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean
Allow brownies to cool before slicing
