Ingredients:
- 1 cup cooked black beans
- 1 cup corn kernels
- 1 avocado, sliced
- 1 tomato, diced
- 1/2 red onion, thinly sliced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 8 small corn tortillas
Instructions:
In a bowl, mix together the black beans, corn, avocado, tomato, red onion, and cilantro
Add lime juice, cumin, chili powder, salt, and pepper to the mixture, and toss until well combined
Warm the corn tortillas on a skillet or in the microwave
