Fried Dandelions Elote Salad



A vibrant and flavorful salad combining the unique crunch of fried dandelion petals with the classic flavors of elote, enhanced by zesty lime and fresh cilantro.

Ingredients:

  • 1 cup dandelion flowers
  • 2 tbsp cornmeal
  • 2 tbsp all-purpose flour
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt to taste
  • 2 tbsp vegetable oil
  • 2 ears of corn, grilled and kernels removed
  • 1/4 cup vegan mayonnaise
  • 1/4 cup chopped fresh cilantro
  • 1 lime, juiced
  • 1/4 cup vegan cotija cheese optional
  • Chili powder for garnish

Instructions:

Take the petals off of the dandelion flowers and give them a good rinse

Put flour, smoked paprika, garlic powder, and salt in a bowl and mix them together

Put oil in a pan and heat it over medium-low heat

Make sure that each dandelion petal is evenly covered with the flour mixture as you dip it in

Fry the dandelion petals in the pan for about two to three minutes on each side until they are crispy

Take it off and let it dry on paper towels

Put the grilled corn kernels, vegan mayonnaise, chopped cilantro, lime juice, and vegan cotija cheese, if you want, into a large bowl

Fold the fried dandelion petals in slowly

Add a little chili powder to the top of the elote salad before serving
